Fill in the blank, if you like Evanescence you would like...

something a little different, because they don't always use use female vocals, but can be described at orchestral metal, are some of Therion's later albums. Maybe they come closer to nightwish's "once" than Evanescence, but considering everyone is saying Nightwish.

I wouldnt really say Therion are close to Nightwish - Once, because Once is a cheesefest, and Therion is quite Cheese Free

closer to Century Child perhaps

Well said. I hate Once for its cheesiness. I have listened to it only a couple of times despite being a big fan of the older nightwish releases. Therion has a much rawer sound. I love "The Crowning of Atlantis".

Seawinds is a pretty nice track

I also think Therion, especially later releases "rocks" alot more than Nightwish does.

Even though it doesn't seem all that popular I do think Century Child is the best Nightwish album

Well, I've got to say I really like Once, just because I find it different from the kind of sound nightwish used to present. However all of their albums are very good, and I have a really hard time trying to pick one I like the most, but I think I'd say "Wishmaster".
Evanescense is nothing like Nightwish. I don't really understand how you can compare. Instrumentally, Nightwish's songs are a lot more complex, and the sound is completely different. Besides, Tarja's voice (even though she's not NW singer anymore) is a lot more powerfull and versatile that Amy Lee's. She sings almost the same way on every bloody song, that's why I don't really like Evanescence. Her vocals really annoy me, and I don't really like the instrumentals either.

Therion doesn't always use female vocals, so I don't think you can really compare. However they are a *great* band, and any metal fan should at least know them.

I think that who likes evansence would be really surprised with some bands in the metal world (and with female vocalists), but they're different. More versatile, more techical, and I think better.
Almost all the suggestions have been made, so I won't be making any

I dont think Tarja is that great of a singer, she's good, but she's simply outdone by some of the natural tones of other singers

my favourite female vocalists in metal would be Simone Simons and Anneke van Giersbergen

Well I think Tarja has very good technique, but she is not irreplacable for Nightwish. I agree that there are better singers with more "unique" voices. My current favourite is Marcela Bovio from Stream of Passion. She doesn't reach crazy high notes, but there is so much emotion in her voice...
