There are many, but these two came to mind first:

Studio:
Al Jarreau - "Since I Fell For You"
from "Double Vision", Bob James and David Sanborn

Live:
John Cowan - "Oh! Darling"
from "Live Art", Bela Fleck and the Flecktones

Lots and lots, but one that's stood the test of time for me is John Popper of Blues Travelers, on their "Live from the Fall" live album. His style isn't for everyone, but he's definitely got stage presence and charisma behind the mike, which their studio albums unfortunately really don't do justice to.

Then there's Tim Buckley (Jeff's dad). Starsailor is really something if you can get your hands on it. Sort of free jazz with Tim's 3 octave range all over the place.
