Braveheart's score (by James Horner) is incredible and probably my favorite, but I have been liking The Last Samurai's score (Zimmer) a lot recently. It comes in a close second. I also like these OSTs (in no particular order): A Beautiful Mind, Gladiator, Bicentennial Man, Requiem for a Dream, LOTR Trilogy, Inception, The Dark Knight, Batman Begins, The Fountain, and some others I can't remember right now.

Goldfinger, Thunderball, You only live twice, Living daylights, Ipcress File, The knack (John Barry - though really, any of his soundtracks...)
Indiana jones trilogy, original star wars trilogy (John Williams)
Sherlock Holmes, Dark Knight Rises, Pirates of the Caribbean 1 (Zimmer)
Star Trek 2 + 3 (James Horner)
Guns of Navarone (I forget)
Man with no name trilogy, fistful of dynamite, once upon a time in the west, my name is nobody (Morricone)
Bourne supremacy (John Powell)
Battlestar galactica, Human target, Da Vinci's Demons (Bear McCreary)
Our man flint/in like flint, Star trek the motion picture (Jerry Goldsmith)

Probably forgetting a heap of great ones.

I usually like film scores done by Ennio Morricone.  Kill Bill, Django Unchained, Inglorious Basterds.

I REALLY liked the film score for the 1981 movie Thief which was done by Tangerine Dream.
