I found the sticky about EQing while I was at work and was able to get my two main headphones equalized on my work computer, which was a PC. Now that I'm on my home computer (iMac), I have no idea where to look for programs that provide the same type of in-line parametric EQing, let alone anything that will work with iTunes....What sort of options are out there? I tried a program called Audio Hijack Pro but the ten-band EQ was not enough.

Audio Hijack Pro is a good choice! Try the AudioUnit Effect -> Apple -> AUParametricEQ. I also tried the Sonalksis ParametricEQ AudioUnit.
