e11k amp: Low gain vs High gain

Hey there, im new with this awesome amp and I just dont understand this:
 
what's the difference between low gain and high gain? I checked with high gain the volume is higher so I need to set a lower master volume level, and viceversa. But is there any other difference in terms of quality or whatever? I haven't noticed anything yet but maybe my hearing is not mastered lol, this is a scientific curiosity for me, which is "better" low gain and high volume level or high gain and low volume level?

Low gain for lower impedance headphones and high gain for higher impedance (or harder to drive) headphones.
So high gain is just starting out the voltage a little higher.

Seems logic, so I guess low gain is fine as long as I don't find myself reaching max volume and being unhappy lol. I have several cans the one with most impedance is 80 ohm.

With the gain set to low or high, it still takes the same amount of voltage to drive a headphone to the same volume.
