I've found that the schematic drawing program that comes with ExpressPCB is pretty good for schematic drawing. And, it can export to a vector format which makes tweaking in Illustrator easy.

That title block sure looks familiar.

Kinda Old tread but this could help you guys, try to check at http://www.consumerrunner.com/best-cad-software-for-mac/ its for mac and so far upon using some Cad software its good for schematics. Hope it helps.

I usually use Altium for circuit design. I know some people who prefer Cadence tools though.
