Shouldn't I be able to hear crackling or pops when playing it back since there is clipping?  I know when I play back my Red Hot Chili Peppers Californication Cd, I can definitely hear crackling.  Same with I'm With You.

Digital clipping only causes audible crackling when it's severe enough. Very light and occasional clipping does have an audible affect as well in the form of introducing distortion to the audio. Below's a video comparing digital and analog clipping if you're interested in exploring how they can be used to alter sound for effect.
