As a musician playing Latin music, some of my favorites are:

Big band/Salsa:
The Spanish Harlem Orchestra (download the songs Se Formo La Rumba and Sacala Bailar)
Willie Colon with Hector Lavoe (albums Lo Mato, Cosa Nuestra, El Juicio)

Son (in the style of Buena Vista Social Club):
look at BradJudy's recommendations

Also, I suggest you give some Afro-Peruvian music a shot, as there's a lot of crossover appeal but with different unique qualities. Susana Baca is my favorite, but Peru Negro is also excellent.

If you want your cuban music exuberant and brassy, check out Cubanismo. If you favor a virtuosic jazz touch, get yourself the two excellent Master Sessions by Cachao Lopez. And I always recommend the Estrellas de Areito set -- a proto-BVSC ensemble, one may say.

For people who want to go deeper into the quieter, more folkloric side of cuban music, with guitars instead of brass and percussion, the 5-CD set Oriente de Cuba is invaluable

Just remembered two fantastic fairly recent records:

Los Fakires - rustic and retro, tweaked with elemental saxophone.

Septeto Nacional Ignacio Piñeiro - Soneros de Cuba - livelier but no less trad…rural music juiced up for the city with trumpet and trombone.

I saw Los Van Van in Buenos Aires a few months ago and they were great!
