I'm planning on buying the Grado SR225i. Instead of spending $40 on the Grado extension cord and 20$ on the 1/4 to 1/8 adapter, couldn't I just buy something like this?

I care about sound quality, but I don't want to go crazy here. Do audiophiles generally go for the expensive cords for extremely high quality headphones + the placebo effect, or is there a serious difference in SQ between $60 worth of Grados extension and a $10 1/4 to 1/8 cord?

That RS cable would sound fine IMO. It just might not last a long time before it develops a short, depending on how nice you are to it.

I use a Mogami 10' but it's not 1/8".
