I've got a Gilmore Lite being shipped to me as we speak and my only quality pair of headphones is an old pair of K240DF's rated at 600 ohms. I don't really understand any of the technical jargon, so would this amp be able to power these cans reasonably?

Can't speak for the sonics, but it's output power is more than enough. I don't know of any commerical solid state amp out there than can't power 600ohm headphones. I believe the lite can even power the K1k.

Really? That's excellent, now I can wait a bit to spend more money that I don't have on headphones
