I'd actually like to know this myself. It it can be done on all models, I'll have my 30GB video modded up.

If I remember right, the CF card fits directly in the Mini without any extra adapters and such.

If you want to put it in a video though, there is some type of adapter you have to purchase. I don't have a link for it, but if you search around here, you will find it!

SD Cards are cheaper, you could try a CF to SD adapter and get 32gb SDHC card for a lot cheaper.

actually a 32 GB CF card is about $70, maybe a few $ less. a 32 GB CF card is almost $130 at cheapest.

I believe most of the larger capacity ipods use a ZIF connector to the hard drive. I have read that you can buy a ZIF-CF adapter. I believe that adapter (with CF card installed) is smaller than the 1.8" hard drive, so it should fit OK. But I have not tried it, so a bit more careful research would be in order.

EDIT: GIYF GIYF2

For the cost, though, why not just replace the drive? ZIF 1.8" drives are much cheaper than CF cards.

Can you provide a link where we could buy as the 1.8" ZIF40 seems to be rare already.

@bundee1 - the iPod Photo uses the 50 pin connection, not the ZIF. Dealextreme sells the adapter:

DealExtreme: $5.30 CF to Toshiba 1.8-inch IDE Hard Drive Converter

YMMV - I bought a ZIF adapter from them, and it was a dud (a 2nd purchase was fine, however).

I have this adapter, a 4G iPod, but no CF card to test (that works). Old 128MB/256MB cards usually don't work, only the higher capacity ones (or so I've read). I don't know if the Photo will work with this mod.

I was looking on ebay -- searched "ZIF drive" and narrowed to Drives&Storage/HardDrives. I see a bunch of listings for 20/40/60/80GB drives. But as I say, I have not investigated compatibility issues, so I may not be looking at the right items.
