Can someone teach me how to roll op-amps?

Not how to take out/put in the op amps, but when you are rolling op amps what do you need to take note of in the datasheet? How do you know that the maximum input voltage to the op amp's supply is too small? How do you ensure that the input bias current is not too big and you are not getting too much offset voltage?

There's no easy answer to this. The key thing you have to think about is that there are thousands of different op-amp designs out there, and the companies making them are not foolish. Therefore, each op-amp design has a reason to exist. There is overlap, which is why rolling is possible, but no design is truly "general purpose".

I suggest you read Op Amps for Everyone That will teach you what the datasheet parameters mean. Then you can start to figure out why a given circuit uses a particular chip, and thus discover which parameters mattered to the designer. Then you use the various parametric search engines to select parts with similar specs in the key areas, letting the unimportant ones vary.
