Thanks in advance for reading:

I am looking for a piece of software that will most closely resemble the old Ipod AND ideally somehow connect with Itunes.

Specifically, I want to be able to see my Artists, Albums and Genres and purely text-based lists. No album covers!

I find it incredibly difficult to find the music I am looking for when using Apple Music, Google Music and/or Spotify.

Any suggestions here is/are greatly appreciated.

Do you know if these would sync wirelessly (over wifi) to Itunes?

I found a couple of apps that do it but have no clue if they are any good (Isyncr and Doubletwist).

Will look into your suggestions.

Not sure about wireless syncing. But if you have say, ITunes on your phone, the app will scan your phone and automatically import your iTunes library into the app.
