Can I use the Chaintech both for digital out for surround and analog out for stereo?

Seamlessly that is, without having to 'set up' the card everytime I switch between them?

I plan have a digital decoder going via a pass through on a Supra preamp to.... headphones or speakers... hence the question.

I need two cards for this, I know... so, any other suggestions would be welcome as well!

Unless you have precompressed audio in Dolby Digital or DTS (like on DVD-V discs) and a receiver capable of decoding one of those, you won't be able to do surround sound over the digital out. If you want to have two cards, one for the digital out, and one for the analog you can do that if you put one in, flash it into an Audiotrak Prodigy (this will be the digital-only card), then put the other in (this will be the analog card).
