im looking at the jaybird v3, vmoda wireless 2, sony WH1000XM2 and bose AC35 II but the 1 star reviews are quite plenty and kind of scaring me away from plunking down that kind of money, always feeling it will break on me soon is not a good feeling

what do you guys recommend? i care about good sound and reliability, the four i posted seems to have good sound but the reliability imo is bad, i am using it mostly for gym and travel

I must admit I have never seen a 1 star review for the Sony WH1000XM2's. I rate them very highly but I'm not really sure if they would be an ideal gym headphone (more because of their cost than any other issue). For anything else though they're really very good indeed.

Why not buy two sets - a cheap 2 dollar wireless headphone (some of them are really surprisingly good for the price) and a set of more expensive ones for other uses.
