Best way to convert from lossless?

I use Max.
An open-source audio CD ripper and audio file converter application. It supports all the iPod compatible codecs/formats, such as Apple Lossless, AAC, MP3, WAV, AIFF, and more..

Highly recommended!

I use dbPowerAmp and convert to M4A for iPod use. I have it set up to use iTunes as the encoder. Seems to work OK. I did my entire FLAC library at once and it ran for 3 days!
