There's 100s of great RPG OST. Impossible to narrow it to 1 or 5. You mention Dark souls, so that means to me is you narrow it down to that 'GOD' sound?
Very similar to Darksoul is Demon soul lol.

Elder Scroll series
These are great but coming out of this narrow box you get much better and unique soundtracks. The best OST are in the JRPGs and real RPGs, real rpgs are JRPGS lol. Not these hack and slash ones
but I do like souls games alot... Waiting for Elden Ring for sure
