I will cut to the chase. Get a Nikon D70s and a 35mm f1.8 or a 50mm f1.4. I went to school for photography. That was my digital setup. I would lean more towards the 35mm prime because it is a bit wider and will act as a normal lense.. IE: Act as a 50mm on a 35mm camera, and give you a point of view similar to human eyesight. I have made 16x20 prints with a D70s and a 50mm F1.4 that have hung beside prints shot with $20,000 medium format cameras and to be honest... could not see much of a differnece.
Later on down the road when you have mastered the normal lens, you can move onto different types of lenses... Telephoto, Wide, Super-wide, Macro.... They all take time to master. And are all very different.
As for taking a class.... just grab up a few books and mess around with your camera alot. Take ALOT of pictures. It's digital.... you can take 1,000's of pictures... if they dont turn out.... FORMAT! Also... the internet is filled to the brim with photography tutorials... No need to take a 'class' for digital photography.

You got one hell of a deal then, because the cheapest price on Sears.com for a Digital Rebel is 700 dollars. Are you sure it wasn't a demo model or a return?

Here the thread on how-to (it's a bit of a YMMV deal):
