Can I use the Airport USB out to the DAC1 when streaming music from my computer to the Airport? Is that preferable to the digital out on the Airport? If not, then should I be looking for the non-USB Benchmark and save a few hundred bucks?

AFAIK you cannot. The USB is only for printers. Get the non-USB DAC1 and use the optical out of the airport.

As XXII said, it's no go via USB. Optical only.

As mentioned above its a no-go!
The USB on the AirPort Express are for printers only. You will not be able to stream audio through it...

So optical out are the only choice.
