You might try Trigun, to which Cowboy Bebop is often compared. It's a lot more heavy on humour, but has a very similar formula.
 
 
I'm working my way through Master Keaton right now, and it's pretty enjoyable. I think I have a thing for episodic series.

I definitely enjoyed DMC when I watched it. I started watching Dennou Coil earlier this week and so far it's quite interesting.
