Just came upon this thread while checking out the music forum in general.  I'm a huge fan of Brian Eno (anticipates the "that's too mainstream" statement) and his work - Plateaux of Mirror, music for airports, discreet music etc.  But I really like the lesser known Pavilion of Dreams (with the talented Harold Budd).
 

 
Stars of the Lid is pretty good too.
