3G of RAM will really help. unless you are doing some CPU intensive work.

I got mine upped from 1 to 2GB this summer and it certainly helped. I quite like the machine...

Would you have done the trade? am I out of my mind?

I would depending on the weight, size and autonomy.

The T60 CPU is a bit lacking if you're doing CPU intensive task. I don't and have been using a 1.6 celeron with 1GB ram until some months ago so it would be ok. The disk increase is not really worth as disks (external or internal) are really cheap. Also the ATI graphics card, being better is less compatible with the OS I use (linux) and more power hungry than the intel.

Curiously not much labels put the weight, size and specially autonomy on their laptop specs, go guess why for what is supposed to be a portable device.
