I swapped out an LM4562 with an AD8066 to compare but its seems to working incorrectly. Im getting very loud buzzing with the volume pot at zero and very loud pops when disconnecting the headphones,

I read that the AD8066 needs a gain of 5 to work correctly... is this the problem? my amp has a gain of 2.

Yep.

Just an FYI, but AD opamps can be squirrelly anyway. Some of them won't work even if there isn't a gain limitation stated.
