Buy used gear. That way you'll be able to re-sell the items you don't like or that lack the synergy, without losing the extra amount that comes with new products.
Also, the only way to really find out what you like the best is to try out a lot of different products. Most of the time that means buying and selling. Meets are a great environment to make quick comparisons, but quick comparisons also tend to enhance the "ear candy" aspects in detriment of longer term value, wide musical range and comfort.
I could sell all my audio equipment today and still be happy for the few years I've spent trying out different equipment and learning the nuances of the hobby. As nearly always, the ride is more important than the destination.
You. Will. Get. Bored. With the HD800 or without it. Look at spritzer. The best Stax setup money can buy and he's still going through all sorts of electrostatic esoterica just for the heck of it. We are sound collectionists more than anything.
Good luck and have fun. Buy stuff that maintains its value.
