I may be getting a really nice pair of headphones but they are terminated with a 4 pin XLR plug. I don't have an amp that has an XLR jack. So...I'll be getting an adapter. Will a cheapo off ebay work or should I look for something a little better?

Or, could I just hack off the XLR and install a new 1/4" plug? Never had to deal with a 3 or 4 pin so I don't really know anything about them.

You can hack off the 4pin & put a 1/4 inch plug in its place no problem.
The 4 pin has a left & right & seperate grounds for each channel,On the 1/4 inch plug you would tie the 2 grounds together on the 1/4 inch plug.

I wouldn't worry too much about it.  I see some for $50 on ebay.

And I wouldn't hack off the 4pin connector.

You could also make your own, just get a male 4 pin XLR and a 1/4" TRS plug and a short piece of 4 conductor cable. and do a little soldering.  Probably can be made for $15.
