Help please! Right so now I'm pretty much stuck,

UM1 + Amp (Go-Vibe 6 maybe) + IC vs IEM (UM2 maybe, for a few more $$)

What ever I get will be connected to my 5G 30GB iPod running 160 - 192kbps mp3s.

You are better off taking that budget and putting it into a UM2 or something comparable IMHO, while the amps do make a difference, they do no make a $100 phone sound like one 2.5x the price (at least in your given scenario).
