I'm about to purchase a KA17, but tell me: how is the double price justified for a Cayin RU7? I also had in mind to buy this last one, the RU7.

I too have the KA17 and while I can't compare it too the RU7 but I can say it does sound really good. I haven't been testing it for long though, and also fiio is releasing a big update this week so I plan to start my review after that update comes.
I would say the RU7 is only better in timbre and soundstage width, but the KA17 trumps it in other technicalities, power specs and PEQ.
KA17 uses more battery/gets hotter on desktop mode though, but this can be turned off if you are using a phone or using easy to drive gear.
RU7 is way more expensive too, so value goes to the KA17.
Personally, I would buy the KA17. But once again, best to read a collection of reviews to come to a consensus after getting different opinions. I have some difficult to drive gear and do need the extra power on tap, also use the PEQ occasionally, so the KA17 is my preferred dongle.
