I currently have the Fiio x5i and been bitten by the upgrade bug. I am currently on the fence if I should go the x7 route of the cayin i5 route.

I know this is the x7 thread so I will most likely get votes for the x7 but I would rather get inputs from x7 users and why some or more would suggest the cayin i5 over it.

Sound sig I prefer is neutral to a tad bit bright by the way.

After volume matching all sound the same to me so if you don't need spotify stick with X5.

I recall the x5 being a slightly warm dap. The x7 is neutral-bright so it might match your preferences better.

You may want to wait until FiiO gets the bugs out before dipping your toes into the X7 waters. It's the main reason I am still using my X5 first gen. I have to have perfect gapless playback. That's my deal breaker. By all accounts, even with the multitude of issues many users appear to be experiencing, the X7 seems to be basically functional, but if you are finicky or demanding then this might not be the right time to get into the X7, even if it possesses the sound signature you are looking for. If buggy but functional is within your tolerability range then go for it.

The hiss will depend on the IEM being used.  With massively sensitive IEMs there may be some hiss (eg Andromeda).  What IEM are you pairing with?
