XLR recable

I'm recabling HD650s so that they can be driven from XLR preouts on a DAC. Do I just match up the positive and negative leads for each driver to the positive and negative pins? Also can we come to a consensus for whether, in this application, the negative pin should be shorted to the ground pin?

if you short - to ground your best outcome is turning the device into single ended, and your worst is blowing it up. it depends how various things are configured.

Yes, just match the positive and negative from the headphones to the positive and negative on the plug. And yes, just leave pin 1 alone. The only time where you might use it is if you have a shielded cable where you connect the shield to it so it is drained to ground.
