Anyone know anything about rippers that constantly vary the kbs for songs ?

Are you asking for a ripper that creates variable bit rate mp3? If so, EAC / LAME is probably the popular choice. The setup is quite a bit more than clicking on an "Install" button but generally worth the effort.
I expect many other rippers can do VBR as well. Did you try download.com, or some of the other sites that host freeware?

The VBR feature in iTunes works quite well.
