Is there downloadable test software with varying pitches, etc, that I can use to test out my amp's two channels?

Perhaps the Bink Audio Test files will work for you - Michael Knowles: Extras. Make sure to also download the instructions/commentary. There are a few tracks that can damage speakers or headphones if not use properly.
