Dear powers that be. Would you be willing to change the subscribed thread default from automatically subscribing to email updates to an opt in setting? Thank you for your consideration.

You can change this setting any time you wish on your Account Preferences page. Just uncheck the box that says "and receive email notifications" and then click "save" at the bottom.
When you click the "watch" button on any thread, the "without receiving email notifications" option should already be checked by default.
