I see the large banner at the top saying not to use paypal or anything of the sort, so what is used to complete transactions? Also why isn't paypal acceptable?

Paypal is acceptable, it's just highly recommended not to send as "gift" because that leaves you with pretty much no protection if the other party tries to rip you off.
