I understand that the iPod Mini can use CF cards. Anything else?

You can convert the iRiver H120/140 to use a CF card.

Technically, yes, but there are various MP3 players out there already that are screenless. For example, the ipod shuffle. But making your own MP3 player from scratch would be incredibly difficult to do since you'd probably have to program your own firmware and everything. Definitely not recommended.
