Can you guys plug/use 2 different IEMs or cans on the M15s outputs? I heard it's possible to do thay with the M17.

If I'm using the device on DC mode, if by any chance I accidentally unplug it, would it turn off? Is it internally protected against power surges? Are there going to be new cover cases anytime soon?

Given your preferences, you may want to consider getting a smartphone and a portable Dac/Amp. I personally have the FiiO M15s on my list along with Shanling's M7 and Hiby RS6. The M15s is actually on top of my list solely for the DC mode.
