Hellsing has very cool jazz/rock stuff. Final Fantasy Advent Children (though not really anime) has a good soundtrack too.

I do think that Opeth should use clean vocals more often. Like in Ayreon - Day Twelve: Trauma, Ackerfeldt is just perfect.

Dark Side Of The Moon was also the album that made me like Pink Floyd. To be more precise, the track Time rocked my world. So, if you don't like Floyd yet, try that song. It's in my opinion quite uhh, normal song, nothing really weird about it.
