HELP-Sound Blaster ZXR vs Xonar Essence STX
I believe they use the same DAC chip so sound quality should be similar. I would go with the SB ZXR if you can can it for significantly less.- oronga

EQ Question
You should avoid EQing a frequency up as this will cause clipping. Try lowering the rest of the frequencies instead.- oronga

Realtek HD integrated audio
Onboard audio is generally very low quality; you would likely hear a large difference between integrated audio and even a cheap solution like the Fiio E10. If you don't need an amp, I found the Hifimediy Sabre dac to be a night and day improvement from integrated for cheap.- oronga

Best headphones for Classical music?
I think AKG K/Q701/2s would be great for your needs, also tweaking them for a smoother frequency response using a graphic EQ works wonders in my opinion.- oronga

I would recommend the 8320 headphones from Monoprice. They are less than $30 shipped and sound amazing for the price so I think they would be great for your first foray into higher quality portable audio.- oronga
