I have tested the Sony and I couldn't really detect any hiss. So I would guess it is more a less a draw on SQ? One more point though. I would not be jailbreaking the Touch if i am going to buy it. Another question, what firmware does the 2nd Gen Touch come with?

You actually have to use iTunes to be able to have gapless playback as the player itself is not capable of doing it. It makes use of iTunes to process the files during syncing and stuff. Also, do a restore, that might help.
