Why for the love of God does Meat Loaf use that name?

Because "Lamb Chop" was taken by a puppet.

Although, both have their respective rabid fan base, they are both equally overated IMO and their supporting cast never seemed to get the credit they deserved.

Sorry for the rant, but somebody had to say it

The most common rumor is that it was a childhood nickname. Some say it was given him(Michael Lee Aday) by classmates due to his rather large size as a child. Others say it was given to him by his alcoholic father who used it to tease him about his size.

People knew who Shari Lewis was. It's kind of hard to miss the puppeteer on a sock puppet.

Does anyone really know who Ellen Foley was? Maybe, maybe not. Of course, that's the unfortunate bit, as she was a contributor to several acts - not just Meat Loaf. Of course, there's also the unfortunately obscure Lorraine Crosby and the recent collaboration with Marion Raven.
