The full album of Doppelganger by The Fall of Troy is my go-to reference for new headphones/amps/etc. It's not a pinnacle of mastering, but it has the exact type of organic, highly-complex guitar and drum passages I need to be fully represented by a listening device.

I'll usually use one of the CDs I played on, because I was there when it was recorded and I know what everything sounded like fresh out of the studio.
 
Otherwise, another track I like to use is The Coast by Paul Simon off the concert in the park from 1991 CD.

I have a few cds/songs
 
Vivaldi  - Four Seasons cd,  particularly winter
Pachelbel - Canon in D Major
Dave Matthews Band - Crash
NIN - Closer
Massive attack - Angel 
 
Just like to have a good difference in music.
