You have an excellent point and I applaud you. Coincidentally I’ve had some fantastic vegetarian dishes recently.
English peas hummus
This is a very rare version of hummus made from English peas and wow. Totally took me by surprise! Made from fresh peas and with “everything” flavored lavash crispy flat bread and garnished with watermelon radish slices. This was from a really cool bar. So good! This was crazy delicious that I want to attempt to make this at home.
Agedashi Tofu rice bowl
I’m amazed how vegetarian dishes can be. The chef from this cafe was a chef from one of the Ritz Carlton hotels. As you know Ritz Carlton hotels have high standards so having one of the former chefs making a dish is a wonderful treat. Simply marvelous. Absolutely fantastic
Vegetarian restaurants are actually more inspiring. The level of creativity can be through the roof in a wonderful inspiring way.

Classic Italian American salad
Loved this. High quality vegetables and generous amounts of high quality cheese.
It’s common for salads to be mediocre in most American restaurants but when it’s good, I love it. Was so happy to finally see a good salad with actual high quality ingredients and well composed and a good sense of uniformity.
A little off topic: The best salads I’ve ever had were actually in Japan. I was blown away and they did not taste like anything you see in Japanese restaurants in America.

Shockingly good vegan ramen noodles
I was actually blown away by this bowl of vegan ramen noodles. The owner of this ramen shop used to work at a Michelin star ramen shop in Los Angeles. The noodles are house made too and quality is superb.
I spoke to the waiter about this and he agreed that it’s special and he’s not even vegan. It’s a shiitake mushroom based broth and the flavors are very complex with a convincing meat like taste to it. Simply blown away by this outstanding rendition

Fishing in the lakes and rivers is part of the culture in Arkansas. This is one of the traditional foods of the location and it’s very delicious. Great crispy texture
Fried beer battered onion rings
Fried foods is part of the culture of Arkansas and they do a great job. This was an excellent version of onion rings.

Also known as Dora Wat and Kitfo. Love Ethiopian food. It’s an east African cuisine that’s different from west African cuisine. So if you’re used to west African food, Ethiopia offers amazing dishes that really impresses.
