Something I have been wondering... can a low/unity gain opamp circuit (cmoy or similar) be used as an impedance matching stage between an OTL tube circuit and a low-Z headphone voice coil?

It can, but why? For almost all low impedance headphones, you don't actually need much if any gain, certainly not the high gain you'll likely get from your tube stage. And while many opamps can be used as buffers, they make kind of lousy ones. There are better solutions to both parts.
