How fun is the He560 compared to the Hd700? I listen to mostly rock and metal but a little bit of everything except pop. Could anyone who has heard both give me a bit of a comparison?

I've heard both although I didn't have time to thoroughly compare the two.  The HE-560 is not "fun" by traditional definitions.  It is very neutral (a tad bright but not nearly as bright as "fun" headphones, namely V-shaped sound signatures) and aims to sound true to life.  
 
The HD 700 has more warmth in the mids and less detailed treble, as well as less air around instruments, and likewise I wouldn't categorize it as fun (it also tries to be close to neutral).  The HE-560 has a bigger sound stage, better bass texture, and sounds more transparent.  It's a small step above the HD 700 in my opinion.

Given the price, the HE-560 is a 9.5 and the HD 700 is now a 6 maybe.  The much less costly HE-500 kills the HD 700 in value, and is overall the better headphone in my opinion.  I can no longer recommend the HD 700.

I own the HE560 and have some HD700s on the way but I have heard the 700s.

The 560s are a very smooth flat sound that I personally love a lot more for all rounders as they hit every category and sound area good enough for me. Hard to complain about anything on them.

The 700s are warm and pretty spacious and have great imaging. Rhamnetin is indeed correct. It is hard to recommend these when a great like the He500 can be had for the same price. I would take the He400i over the HD700 and the he500 is technically better than the hd700 though they appeal to different crowds so it's a tad oranges to apples. At least to me. The hd700 are really cool with jazz, classical, and have a warm signature that works with everything. Their imaging is impressive and soundstage is quite decent. The he500 have a bit too rolled off of treble for some and the mids really take the show though they're impressively natural.

HE560 - I Would say 9.

HD700 - these depends a bit on my mood but like 7-8 - though may change a bit with more time I'll be having with them - varies a LOT by person (I've seem impressions go from 4-9 generally)

HE500 - ( for me an 8 though generall 6-9. Really hit or miss for people.)

He400i - 8.5. Great for the price and really hit many sweet spots with many people. Easily one of the best under $500 and I like these more than the HE500.

What about soundstage aside if price factor. Cuz I own hd700 but I m looking into he-560 and I m kinda satisfying with this soundstage. I don't want to have any smaller soundstage size cans which appears to be short of any orthod

HE-560's sound stage is wider.  I couldn't tell the difference between the HE-500 and HD 700's sound stage upon short listening.

If I perceive it as wider then you might find it to be a lot wider.  I don't notice sound stage as much as others, although I didn't spend a lot of time with either headphone.

I can find new HD700 for $599 at NCIX (a Canadian retailer who also ships to the US). At that price, compared to the $899-$999 HE-560 sells at, depending on where you buy it, the HD700 is great. It is easily the second most comfortable headphones I've ever worn (first being the HD800), and while it has some treble sharpness, overall, it truly belongs in between the HD650 and HD800.
 
HD700 is far less picky and easier to drive than the HE-560 as well, the latter of the two requires quite a bit of power.
