Audio amps don't "need" a ground to "work", any more than a flashlight does.
For simplicity, we use "single ended" signals where everything is referred to a common bus (traditionally the metal chassis of a tube radio pr PA amp). That bus has to connect troughout the system; this is normally taken care of by the connectors and cables.
