Currently in use:
- Shure SRH 1840
- Shure SE 535
 
I'm looking to upgrade either:
- Shure SRH 1840 --> AKG 812 Pro
or
- Shure SE535 --> Shure SE846
 
Which of these upgrade options is the biggest upgrade?

Very view have heard the 812 yet.  Best to wait until they penetrate the market and we get a better read.
