In my experience, the condition of the pads makes more of a difference than the ep/mp/lp designation.
 
The prices for Sextetts goes all over the place depending on condition. I've seen them for between $60-200. There have been a couple on the forums recently for under $100. You could also consider the DF model which is a bit more rare.

The Denons have a lot of resonance which makes them feel a bit "slow" for metal (unless you're playing melodic/doom type stuff). That same resonance also makes them a poor choice for FPS games, though good if you just want some low end rumble from explosions orchestral scores and the like.

I can go up to about £150 tops on the phones alone, and like I mentioned, I prioritise sound quality and positional audio (so I would imagine that is soundstage then?) above all else. Bass is nice if included, but not at the expense of the previous. I'm sure it will be better than my crappy 2.1 setup now anyway; so long as there is bass at all, I will be happy. I'm looking for value as well, so if (say) the 595s are great value, and there is nothing much better, but still costing significantly more, I will likely stick with the 595s.

Any advice you can give, even if just dropping some names for me to research, would be a massive help to me. Sorry about the essay, but I figured the more info I give, the better advice I can receive.

The Sennheisers and Audio Technicas you listed are top of the heap for gaming headphones (and the PC360 is basically the same with a mic). The AD700 will have a slightly wider soundstage, and the Senns will give a bit more bass and will sit a little more securely if you're the type that shakes your head a lot.

Thanks for the quick and helpful response. I do not need closed since I plan on gaming I am assuming open would be a lot better soundstage wise. Portability is not an issue, these will be used in home for gaming and music only. I am going to need some sort of AMP/DAC because my soundcard is absolute rubbish. Budget of ~$1300.

With that kind of budget, you've really got a pick of just about anything you want.
 
At a reasonable price, consider the Audio Technica AD2000 (which you can find used for ~$400). I haven't heard that particular model, but I've tried a bunch of the budget and midrange ones and in general the refinement and placement improves as you move up the line.
 
Hurting the wallet, you can look up the Senn HD800, Beyer T1, LCD-2, HE-500, etc. I highly recommend attending a meet to try some of those out before purchasing though.

Awesome! I will definitely try to hear some of the higher-end models for myself to make a decision. It will be interesting to know how the higher-end cans handle the Metal genre and gaming.

I wouldn't really use either for production... though I would hesitantly say the M50 is a bit better if I had to pick one. The 840 is bass sloped and has more resonance in the bass end which makes it feel even stronger and melds into the mids a bit. The M50 feels U shaped but it's a little less rumbly and you can EQ the bass and treble down a little bit.

Here are the aspects I'm looking for in headphones.
 
Price: $200-$300
What I'll playing it on: Macbook Pro, iPhone, Yamaha RX-V867. 
Music Genre: Dubstep/Classic Rock/Alternative/Classical
Portability: I'm not looking for anything too portable. Maybe bring them up the college for days when I'm imprisoned in the library.

Maybe able to get away with out spending your whole budget.
Beyerdynamic DT-770 Pro 80-Ohm, nice sound for bass heads.

Good rock rock and some alternative, but not so much for classical or dubstep, and totally inappropriate for a library because they leak sound like crazy.

So I think I have narrowed down what I think I'm going to get but I still do not know because I have not listened to the Denon but I did have a chance to listen to the Beyer DT 77o Pro.  So those are up against the Denon ADH-2000 or ADH-5000.  So has anyone heard the differences between those three models?

The DT770 has more "thump", while the Denons have more of a rumble to them, with the 5000 moreso than the 2000. The mids on the 770 feel recessed compared to the bass; the Denons less so but they have more bass bleedover. 
 
Valuewise, go with the DT770 or D2000. The Beyer is more impactful, has more rugged construction, and better isolation. The D2000 is a "warmer" sound, more relaxed, arguably more comfortable though not very good at isolating.
