Increase the exposure? Wouldn't that make the stars all blurry? I don't want to shoot startrails :|

Well, I guess I have to toy around a bit more with my camera....I'll be in Sweden for a few days, and I think that's a much better spot to shoot photos like that :)

three minutes is too much. 
 
No more than 50secs to a minute i'd say. If are needing to expose that long you are probably using lower ISO. WHat camera are you shooting with. Most should manage 3200-4000 ISO at 30 secs with as wide an aperture as you are shooting.

I'm using a Sony DSC-RX100...that might limit me a bit.
I tried to keep a good balance between noise (ISO) and blurry stars (exposure).
So would you say that I should use ISO below 3200 and crank the exposure up more?

no. I can't comment on the RX100 low light quality, but just shoot with ISO 3200. Take two exposures, one at 30 secs and another at 40 secs. 
Do the same but with ISO 4000 (if you can set it to that)
 
See which works best for you.

I turned the details down a bit so that the milkyway is a bit easier to see.
Really need to find a better spot to take these kinds of pictures.

Here's just some of my suggestions to try:
 
As suggested above, try for 30 seconds, though at 28mm equivalent focal length, you might get a small bit of start trails if you look closely (though this depends on other factors).
Shoot in RAW, and carefully apple noise reduction so it doesn't affect the detail in the stars.
If you go to an area with very low light pollution and atmospheric effects like haze (from smog or just moisture) then you may be able to get away with ISO 1600, if you shoot with your aperture set to f1.8.
