Indeed, I was told that the HDV800 does a good pairing with HD800 but suck with anything else you throw at it, which isn't exactly value for money.

I am torn away on which I should be getting between these. I can get the SB X7 and the GSX 1000 for the same exact price. Which one should I go for? (I am going to be using these as a DAC) And use either NFB1AMP or Schiit Magni to amp my headphones. I'll be using most probably THX00 or HD600...

However, using optical cable will limit you to 32 Bit / 192K. You need USB to get 32bit / 384K.
