I've used 100% natural wool, not even fully carded, to fill the cups. Different types of wool will have different degree of softness, which usually increases if the wool has been fully and carefully carded. At the same time, the softer the wool the less the fibers will be compact, which might be a good thing and result in an increased damping factor... however, it will also make filling (and closing) the cups a little be harder, since you will have stray fibers everywhere! A nightmare!
Hence why I ended up filling my cups with a more compact (less carded) wool. The wool linked in your post is fully carded, but since it's been kept in the plastic bag for quite a long time (probably) it should be easier to cut it in compact chunks.
I preferred to stay "natural" and immediately opted for the wool (also used in the Alpha Primes, by the way) without even considering other alternatives... but you'd probably be served equally well by the Acousta polyfill. At the end, it's likely the quantity of damping material used inside the cups that will play a bigger role than the type of material itself... it would be certainly interesting to experiment with different quantity of material and check how that can affect the overall sound. As a starting point, I made sure not to exaggerate with too much wool inside the cups.
