Best all around headphones for $800 or less.

In that case, I'll let you know that I prefer the HD 650 over the HD 700 because it has a more neutral frequency response and consistently sounds good whereas the HD 700 can be hit or miss. But the HD 700 has a larger soundstage and is better in certain technicalities. If you're willing to equalize it, it could be just plain better, but I'm not sure, since I never equalized them. I also slightly prefer the HE400i over both of those, and I even think it sounds mostly as good as the ($3,000) HE1000!

Do you think the premium of the HD560 is worth it over the HE400i?

I haven't heard that one. But since the HE400i gets so close to the HE1000 in my opinion, the HE400i is definitely the best value among the three. Not sure how you feel about buying headphones without hearing them first, since you said there aren't any nearby shops that sell them.

It's often hard to say which one is best because these are all quality headphones with different sound signature and you might end up liking one more than the others for different reasons. If I were you, I would pick a Tesla T1 (1st gen) because it's a superb headphone technically speaking and it's also warm and musical so it will work well as an all-rounder.
